Vanilla Spice Sourdough Quickbread
This recipe is one of those things where someone else tweaks a recipe, then you find it and tweak it some more. And it's one of those things that you can really have fun playing with! A couple ideas I have kicking around my head is to make it with chai spices or add nuts, diced apples, or maybe some chocolate! I mean really, what isn't better with chocolate?! Anyway, my new starter was finally ready to start baking with and this was definitely the way to break it in ;).
1 cup sourdough starter
1 cup sprouted flour
1 cup unbleached all purpose flour (or use all sprouted wheat if you'd rather)
1 tsp of Pennsylvania Dutch spice mix
1/2 tsp sea salt
1/2 cup honey or maple syrup (I used 3/8 cup maple syrup plus a couple squirts of vanilla stevia)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup melted coconut oil (not hot!)
Mix it all up, scrape into a greased loaf pan (I used my Pampered Chef stoneware loaf pan) and bake at 350*F for 50 minutes (or until toothpick comes out clean). Tip out onto cooling rack and cool before slicing.
Delicious slathered with butter and enjoyed with a hot cup of Earl Grey <3
