We love fish in our house. Usually I just dredge fillets in seasoned flours and saute in a little palm shortening, but I have been craving fish fried in thick batter like in fish and chip shops! So I tinkered around and made a yummy fish batter from sourdough starter! If I could afford the amount of palm shortening needed I'd use that, but usually for deep frying I just use horrible-for-you vegetable oil because it's affordable, I just try not to deep fry too often!
Sourdough Fish Batter
1 1/2 cups sourdough starter
1 T melted fat (I used coconut oil)
1 tsp salt
1/8 tsp pepper
water if needed to thin out batter (I keep my starter on the thick side, you want the final batter to be like pancake batter)
Dip boneless fillets (I used wild caught haddock) in batter and deep fry at about 375-400F for about 5 minutes or until golden brown. SO delicious!
