My Dad's Apple Cake

My dad is an excellent baker. My mom's pretty amazing too, so I guess I got the baking gene from both sides ;). I'll share some of my mother's recipes, including HER delicious apple cake, later. Today it's all about dad! This is a very yummy coffee cake, definitely worth gracing the table at any Shabbat meal! Today I made it to tuck away in the freezer for our Shabbat breakfast this week!

2 1/4 cups flour
3 tsp baking powder
1/2 tsp salt

1 1/2 cups of sugar (white or white and brown)
3 eggs
1 tsp vanilla
3/4 cup veg. oil
1/4 cup water

Beat together and pour half into a greased and floured 9x13. Spread to coat bottom.

6-8 small apples, peeled and sliced

Top batter with apples and sprinkle with cinnamon.

Spoon the remaining batter and cover the apples as best you can. B
ake at 350 for 1 hour. 

To freeze, cool completely, wrap tightly in cling wrap, then with foil. Allow to thaw slowly in the fridge, still wrapped. YuuuuuuuumMY!
