Jessica's Amazing Salad of Epic YUM

Yup, that's all that's left of the salad we had with supper tonight. I wish I'd taken a picture before we dug in because it sure was pretty! My friend Jessica posted this recipe on Facebook a while back and it sounded yummy so I tucked it away and waited for a good opportunity to serve it. I got tired of waiting for company though so I made it for Shabbat. I can tell you that it's going to be a company dish for sure because it is DELICIOUS!!

Romaine lettuce (I used 2 romaine heats)
Baby spinach (I used a small box)
Feta cheese (I used a whole brick because...well...FETA!!!)
Dried cranberries (a couple handfuls)
Walnuts (a couple handfuls)
Fuji apple, diced (I used a large one)

Toss the lettuce and spinach and crumble the feta over, then sprinkle on the cranberries, the walnuts, and the apple.

For the dressing...

4 tbsp extra virgin olive oil
3 tbsp rice vinegar
2 tbsp maple syrup
1 tsp poppy seeds

Put everything a mason jar and shake the living daylights out of it. (Here's a tip, add a pinch of xantham gum, or a raw free range egg yolk, to emulsify the dressing and keep it from separating.) Pour over the salad and toss.

Now, this salad was DELICIOUS as written, but it would also make an awesome template for a bunch of other salad ideas! Here some variation ideas I think would be delicious...

Instead of feta cheese try: crumbled blue cheese, grated fresh parmesan, those teeny tiny little mozzarella balls or shreds of really old cheddar

Instead of dried cranberries try: dried cherries, dates, figs, or dried blueberries

Instead of walnuts try: pumpkin seeds, sunflower seeds, pecans, cashews or almonds

Instead of apple try: pear, grilled peaches, fresh pineapple or mango cubes

Instead of maple syrup try: pomegranate molasses, honey or brown rice syrup

Instead of poppy seeds try: chia seeds (would also help thicken the dressing) or hemp seeds
