Homemade All Beef Pepperoni


Our favourite go-to pizza topping combo has always been pepperoni, mushrooms, and green peppers. When we stopped eating pork however, that combo became much harder to do, especially when you want to eat healthy! You can buy turkey pepperoni, and it's good, but it's chock full of unhealthy additives! So I decided to make my own, healthier version of pepperoni for our pizzas! You can cook this as crumbles (easier), or you can form it into a log and slice as thin as you can manage. You want to let this sit in the fridge for a few days for the flavours to really meld with the beef so plan ahead!

1 tsp peppercorns
1 tsp fennel seeds
½ tsp red pepper flakes

Grind coarsely in a pestle and mortar or a spice grinder.

1 tsp mustard seeds
½ tsp garlic powder
1 tsp salt

Mix with the ground spices

1 lbs very lean ground beef (you don't want your flavourings to drain off with the fat!)

Mix with the spices

1 ¼ tsp liquid smoke
couple drops of liquid stevia

Mix in very well. If cooking as a log to slice, form beef mixture into a narrow log, place on a cookie sheet, wrap in cling wrap or foil (place some parchment paper over it first so the meat doesn't contact the plastic or aluminum. If making crumbles just put it in a bowl. Cover and sit in fridge 48-72 hours. For the log, place in a 300F oven for about an hour or until internal temperature is about 190F. For crumbles, break meat up into a frying pan and cook like ground beef. Yummy!
