Healthier Sweet Onion Dressing



There is this sweet kale salad mix that I like to buy. It has kale, cabbage, Brussels sprouts, and it comes with pumpkin seeds, dried cranberries, and a DELICIOUS sweet onion dressing. Problem is, neither the sugary cranberries nor the dressing is very healthy. Now the cranberries I can just leave out no problem, but if I want to keep enjoying this salad, I needed to come up with a low carb version of sweet onion dressing! I played around with a recipe I had written down from somewhere a long time ago and I think the results are pretty darn good!

1/3 cup raw apple cider vinegar
3/4 cup extra virgin olive oil
1 tbsp dijon
1 tsp salt
2 tsp onion powder
1/4 cup erythritol 
2 droppers liquid stevia
pinch xanthan gum (optional, but I like a nice thick dressing that doesn't separate!)

Blend until emulsified (I used my NutriBullet)

1 tbsp poppy seeds

Stir in.
