Soaking may work on a lot of things, and there ARE sourdough cookie recipes, but sometimes I just want to throw a batch of cookies together on a whim, without waiting 8-12 hours for the flour to soak! You can use sprouted flour, but I don't always have that available. So, when I want to bake cookies but don't want to resort to white or unsoaked whole wheat I reach for almond or coconut flour!
These cookies use almond flour and they are absolutely delicious! I left them plain this time but they are so yummy with chopped peanuts or chocolate chips added!
1 1/2 cups almond flour
3/4 cup sucanat
1 1/2 tsp baking soda
1 tsp sea salt
1 cup peanut butter (natural, just peanuts!)
1 tbsp pure vanilla extract
Mix everything together well (I use my mixer) and drop onto parchment lined baking sheets (I use a cookie scoop for this, seems to hold a little over a tablespoon maybe.). These spread out a little, but not too bad. I'd leave maybe 2 inches between dough blobs. Bake at 375*F for 11 minutes. Once done move to a cooking rack to cool.
ETA: These are very soft cookies. If you prefer a crunchy cookie (like I do!) just pop them in a dehydrator until crispy!
